can you do stop motion with a dv camera?

I fancy doing a bit of stop motion. Can you do this with a dv camera or should I just use my old 8mm camera?

I got loads of old (pro) stuff a bit back from Leeds uni, for £5.

Some of its a bit too pro and I need to work out how it works.
